Hoisin Pork and Boston Lettuce Wraps

I have been on the search for new and easy dinner recipes and came across this gem. I served it last night with a side of rice to satisfy my hungry husband and kids, but otherwise as is, it was a huge hit!  I will be making this again.  Try it out and let me know what you think.

Hoisin Pork and Boston Lettuce Wraps

Tender strips of pork, coated with a lime-infused hoisin sauce, are nestled in the delicate folds of soft, buttery Boston lettuce leaves and topped with a crunchy coleslaw. Three wraps are perfect for a light summer meal; individual wraps make excellent appetizers.
Prep: 11 minutes; Cook: 4 minutes
Prep Time: 11 minutes
Cook Time: 4 minutes
Yield: 4 servings (serving size: 3 lettuce leaves, 6 slices pork, about 2 tablespoons hoisin-lime sauce, and about 3/4 cup coleslaw)

Ingredients

  • 1/3  cup  hoisin sauce
  • 1  tablespoon  plus 1 teaspoon lime juice
  • 1  tablespoon  plus 1 teaspoon water
  • 3  cups  packaged cabbage-and-carrot coleslaw
  • 1/2  cup  chopped fresh cilantro
  • 1/3  cup  unsalted peanuts
  • Cooking spray
  • 3  (4-ounce) boneless center-cut loin pork chops, cut into 24 thin strips
  • 12  Boston lettuce leaves

Preparation

1. Combine first 3 ingredients in a small bowl; set aside.
2. Combine coleslaw, cilantro, and peanuts; set aside.
3. Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add pork; sauté 4 minutes or until lightly browned. Remove from pan.
4. Arrange 3 lettuce leaves on each of 4 plates. Top each lettuce leaf with 2 slices pork, hoisin-lime sauce, and coleslaw.

Peanut Butter Rhino

Peanut Butter Rhino has been a favorite in our house for years and is cherished for all the silly laughs it brings. The book follows a rhino getting ready for a picnic when he accidentally sits on his sandwich. The rest of the book is spent looking for the sandwich as many friends join in. Each page shows him searching, with the sandwich plastered to his bottom. Sounds stupid you say? Well, that's because you're not under the age of 10.  Both my kids laugh hysterically at the sight of a peanut butter sandwich stuck to a rhino's bottom. If you like silly, you'll love this book. I love the many times we've all laughed together and cuddled as we've read it.

Christmas at Costco

This past weekend we were at Costco and spotted this Gingerbread House kit. I didn't think twice before placing it promptly into my basket, since the house is already made. All you have to do is decorate it, which is honestly the best part anyway, right?  Better get yours soon before they are all sold out!

I still have vivid memories of last year's disaster. My daughter loved it, but what a mess! And to think the house probably stood up for maybe one minute before it collapsed. Wish up luck this year.

Grilled Salmon with Mango Salsa

This is one of the  first Weight Watcher recipes I  tired when I started my weight loss journey. It's fabulous and always a huge hit with my family. The mango salsa is a bit spicy, so I just give my two little ones sliced mangoes instead of the salsa.  I also serve black beans with this dish. Enjoy!

Grilled Salmon with Mango Salsa

Ingredients
2 tbsp sugar
1 1/2 tsp orange zest
3/4 tsp table salt
1 1/2 pounds of salmon fillets (four 6 ounce pieces)
2 small mangoes. peeled and diced (about 2 cups)
1/4 cup orange juice
2 tbsp red onion, chopped
2 tbsp cilantro, chopped
1 tbsp ginger root, peeled and minced
1 tbsp fresh lime juice
1 small jalapeno pepper, seeded and minced

Instructions
Combine first 4 ingredients; rub mixture over salmon.  Place salmon in a shallow dish, cover and marinate 8 hours or overnight.

Combine mango and next 6 ingredients in a medium bowl; cover and chill 1 hour.

Prepare grill.

Place fish on grill rack coated with cooking spray; cover and grill 4 minutes on each side or until fish flakes easily when tested with a fork. Serve with mango salsa.
Yield: 4 servings (serving size 1 fillet and 1/2 cup salsa)
WW Points: 9

Mommies in the Plaza this Saturday (Aug 29th)

Little Fortune Cookie will be at the Mommies in the Plaza Business Fair on Saturday, August 29th, from 10am-3pm. I will be selling tutus, beanies, headbands, hair clips, and the much awaited hair clip holders! Most items will be priced lower then they will be all year, so time to stock up for those birthdays and holidays. There will also be a random drawing to win a gorgeous custom tutu or flower beanie that day.

Tutus: I will be selling a few premade tutus that will range in price from $12-18. Most importantly though is that I will be taking custom orders on Saturday for tutus starting at $20 and will be shipping them to your desired location for FREE! Tutu orders must be placed and paid for on Saturday to qualify for the free shipping. I will be bringing tulle color samples with me so you can see the colors in person.

Halloween Costumes: I will be taking custom Halloween costume orders at the Mommies in the Plaza event. I will ship all costume orders for FREE if ordered and paid for on Saturday.

Hair Clips: All hair clips will be sold on cards for $5 each. That is an incredible deal since that is almost half what they retail in my Etsy shop for and a third the price what other boutiques are selling my clippies for. Stock up now ladies! The clippies will not be sold at this low of a price again this year.

Flower Beanies: $10-$15

Headbands: $8

Hair Clip Holders: $8

The Different Faces of Friendship

There are several people in my life that I consider good friends. I don't see some of them as frequently as others and I have varied relationships with each of them. I do, however, consider each of them to be an important part of my life.

The Merriam-Webster Dictionary describes the word friend as "one attached to another by respect or affection." This accurately describes my relationship with my friends.

Though we may move in different circles and each have other friends we are not acquainted with, we still share that special bond of mutual respect and affection.

We meet friends in different ways and at different periods in our lives. Some are from our childhood, some from school days and some from social or job situations. Out of all the people that surround us in our daily lives, certain ones seem to share an aura of attraction, which pulls us together somehow. You know how you can be standing with a group of people at a party or social function and there is just something about one of them that makes you want to get to know him or her better? That's the way friendship starts.

Friends come and go in our lives. Some we lose contact with over the years, but some become friends for life. I have several small clusters of friends who shared a part of my life and with whom the sharing continues. I even have a couple "best friends," who don't know each other, but are considered best friends because of special times we have shared.

What would life be without friends? Most of us have families, co-workers and a network of other people in our lives. But our friends are the ones we turn to when we need someone to confide in, seek comfort from or simply have fun with. And the best part about friends is, we know they are in our lives because they choose to be. They don't have to be they want to be. And one of the best and therapeutic things in life is to have a day or evening or even a weekend with a good friend. It's an escape from the harsh realities of life and a good way to get things back in perspective.

So, thanks to all my friends for keeping me grounded and for always being there for me. I love you all!

Out of the Mouths of Babes

I have been on the search for the perfect bathing suit since the beginning of summer with no such luck. Well today was the day that I found that bathing suit. In fact, I found two bathing suits and on clearance. I was so excited you would have thought I had won the lottery! When I got home I tried on the bathing suit one more time when my four year old daughter walked in on me. She looked at me and with a smile on her face said, "Mommy are you wearing a zucchini? I love your new zucchini. When I grow up I want a zucchini just like yours!" Oh my, if that was not the funniest thing I had heard in awhile. I guess zucchini and bikini do sound alike. Ah, out of the mouths of babes!

Little Miss Cutie

This cutie patootie is one of my favorite little ones to have photographed and graces most of my tutu listing on Etsy. She is a natural in front of the camera and always a pleasure to work with. It is so fun to see how much she has grown up since her first Little Fortune Cookie photo shoot. The photos were taken approximately 14 months apart.
